Kid (and Adult) Friendly Protein Cookie

This post is one day late due to the fact we traveled with all three of our very little kids for the first time yesterday.  For those that do not know we have twins who turned two on St. Patrick’s Day and a one month old – needless to say travel equals taking half of the house with us and requires a lot time.  If you have a toddler or are a parent you know just how finicky toddlers can be – especially with food choices.  One minute they love a certain food and can’t get enough of it – the next they hate it and will have nothing to do with it.  As a result I have been playing with a protein cookie recipe trying to find a way to increase the protein for my twins, specifically my son who is ultra picky – particularly with proteins.  Below is a recipe both kids loved (as did my husband).  Who would not love a cookie — with protein AND no added sugars?!?!?!

Ingredients

  • 1 cup mashed bananas (2 bananas)
  • 1 cup old fashioned oats
  • 2 scoops About Time vanilla protein powder
  • 1/4 cup raisins
  • 2 tbsp Sunbutter

 

Directions

  1. Pre-heat the oven 350 F
  2. Mash the bananas in a small bowl
  3. Add all the ingredients (including the banana into a food processor)
  4. Run the food processor until well combined (about 1 minute)
  5. Bake on parchment paper for 12 – 15 minutes
